vanilla bean sugar

As I was paying for my french press at Gourdo's Trinoma, I saw packets of vanilla beans displayed on the counter. I first read about this vanilla bean from Lori’s blog (dessertcomesfirst.com). I have been reminding myself to buy one at Sweet Craft near my home. And I’m so glad that Gourdo’s also carry these.

I got the tahitian kind at P130.00 per piece. Not bad... this is fresh vanilla bean! Since I already made the panna cotta the other day, I meant to use it to make vanilla sugar that I can put on my morning coffee or oatmeal. Vanilla flavored brewed coffee every morning… BLISS! 

For the recipe…

1 Vanilla bean pod

2 cups Granulated sugar

Split the vanilla bean open at one side with a knife and scrape the seeds. Mix the seeds into the sugar. Bury the vanilla pod into the sugar. Place in an airtight container (I placed mine in an old mason jar) and leave for 1 to 2 weeks. Use as regular sugar. This keeps for a long period, replenish with fresh sugar as necessary to make more.
